Making memories!

Hello there!
1 September, SPRING!!!
You know what this means...yip, RAIN!!! Can't wait!!


WHITE LION CUB.....
My children were surprised when I woke them up on a school day to tell them that they could go back to sleep and that we would be going on a family outing....and not to school!
The 5 of us went to the Lion and Rhino park. We had such an amazing time, we laughed a lot! I looove to hear my family laugh! I am sure they will all remember this day for the rest of their lives.....

Shaylee started getting tired and we all took turns to carry her around....lucky fish! Even I started getting tired!

I love having special moments with one child at a time...it isn't always easy when they all want a bit of you ...
We walked passed all the enclosures together..Lion, Tiger, Cheetah, Rhino, Leopard,
they loved it!

Home made is always better.

Yummy Home made goodies!
I have been  busy in the kitchen, making some of my mothers recipes of the most Divine jams, marmalade, pickled onions and lemon curd.
I wish you could taste the end result! ...mmmm simply delish!!
I tried my luck at a local "Organic Market:", but people aren't willing to pay a bit more for homemade goodies, it is very sad, because home made is always better!! I'll rather give it all away to people I love!!
I love to do things my mom used to do, it makes me feel like she is in the room with me, and we are chatting along, like when she was still here. It makes me feel happy-sad. You know what I mean? I am very sure she is thinking..."Aaaah, well done Trace!" or "..Mmmm, good idea"
Comforting memories...


Here is the recipe for my Mommy's Divine Lemon Curd:
  • 6 Large lemons (rind, juice and pips)
  • 350 g Butter
  • 900 g Castor Sugar
  • 8 large eggs beaten
Mommy's Preserving Book, thanks Mom!
Place all together in medium sized pot at medium heat and stir until butter and sugar has dissolved
Pour through strainer and discard the rind and pips
Place back into pot, cook, stirring frequently for about 40 min (until it thickens)


Pour into clean ,dry ,warm bottles.  Will keep for about 4 months. makes 5 med jars.
Easy...and absolutely Yum!!

Weekend....

With my husband out of town and my Jessica sleeping at a friend's house, I imagine this weekend will be quiet.
I will be hunting for a birthday gift for my husband...have no idea what to get him? Some gadget toy....
Isn't is just amazing how difficult is is to look for a gift for a man?
My sister has twins that are turning 4.Wow, she needs a medal. I think she is only getting a bit of her life back now, after 4 years, scary! There will be a party for the twins on Sunday, which usually is something very special, Pamela knows the right people...party planners etc...the children always have a ball.
Baby blanket - the beginning
I will be cuddling up in bed tonight with a good movie and something to crochet, I am almost finished with the granny square baby blanket, hopefully soon. Am now in the mood for summer colours...and have decided that I will be making Things for Christmas this year....just something small for everyone that is going to be there.
There....that would be a little place on the West Coast of Southern Africa, called Strandfontein, where our family will be spending Christmas together for the first time in years. We are 6 siblings. All have a partner =12; plus two of us have 3 children =18; one has two children =20; plus my father and his wife =22.
You can imagine the chaos!!! I have taken over the arranging of accommodation, which is a bit of a nightmare, to try and keep all involved happy.
So here I sit in my sunny kitchen at the beautiful Oregon table, enjoying the peace and quiet of a Friday afternoon  @17h00.
